And you can supplement vitamin B12 for insurance." In the past, B12 was obtained in adequate amounts from a plant-based diet, because microorganisms in the soil manufacture B12. But today, foods are sanitized and scrubbed of soil exposure. Although you may choose to keep some meat in your diet for taste, social, familial or any other reasons, there is no nutritional reason to do so. We discuss protein (that inevitable topic when the notion of a plant-based diet is discussed) in the following section, but rest assured that if your diet isn't deficient in calories, it is practically impossible for you to be deficient in protein.
To keep your body running efficiently, greens are one of the most important food groups. Green vegetables are among the most nutrient-dense of all foods and are full of alkaline minerals, including calcium, chlorophyll and amino acids. They make up your key Beauty Foods that regenerate and purify your cells.

It's preferable to eat only fresh vegetables. However, frozen vegetables are the next best choice if you don't have access to fresh produce or the time to purchase it. Canned vegetables should be avoided altogether, as they may contain preservatives or chemicals such as bisphenol A, are high in sodium and tend to have lower nutritional value than fresh or frozen vegetables.
EAT MORE RAW THAN COOKED VEGETABLES
Eating vegetables raw is the key to obtaining the most beautifying vitamins, enzymes and nutrition, so eat plenty of salads and raw veggies every day. Any type of heat will destroy some of their nutrients. But I know it's not reasonable to eat only salads all the time. It's okay to have some cooked vegetables, especially when you're transitioning and when eating dinner. When cooking vegetables, avoid charring or overboiling them, because you want to preserve the nutrients as much as you can. Steaming or lightly cooking in a bit of vegetable broth, for example, will retain some of the vegetables' nutrients and ensure they are digested easily.
LIMIT ANIMAL PROTEIN
Over the past decade or so, a number of high-protein, low-carb diets have become increasingly popular. A study published in 2002 and funded by the Atkins Center for Complementary Medicine researched fifty-one obese people who were put on the low-carb Atkins Diet. Over six months, forty-one subjects maintained the diet and lost an average of twenty pounds. Sounds good, doesn't it? But consider that the participants in the study were consuming an average of only 1,450 calories per day, which is 35 percent less than the average American consumption of 2,250 calories a day. On any kind of diet, if you were to restrict your calories by at least 35 percent, you would lose weight, at least for the short term. In the same study the researchers also stated that "at some point during the twenty-four weeks, 68% reported constipation, 63% reported bad breath, 51% reported headaches, 10% reported hair loss, and one woman reported increased menstrual bleeding."
Another frightening figure from the study is that dieters had a fifty-three percent increase in the amount of calcium excreted in their urine, which is a big problem for bone density and health. A diet that creates such high levels of constipation shows how unnatural it is for the human body. Constipation holds toxins in the body and is incredibly aging.
Digesting animal protein creates all sorts of by-products in the body, like purines, uric acid and ammonia by-products. These toxins are absorbed into your bloodstream through the colon and circulate all around your body. When your blood is clogged with toxins, it can't transport as many beautifying minerals, and these toxins can age and clog the skin cells of your face. Furthermore, excessive protein consumption overworks the liver and kidneys. In his book Conscious Eating, Gabriel Cousens, M.D., discusses how ammonia, a by-product of digesting protein, contributes to aging. As he notes, "Ammonia, which is a breakdown product of a high-flesh-food diet, is directly toxic to the system. It has been found to create free radical damage and cross-linking (a process associated with skin wrinkles and aging), as well as depletes the body's energy."
Ketosis, which may occur as a result of a low-carb diet, whereby by-products called ketones accumulate in your body, makes the blood acidic. An acidic body tends to age faster. Take a look for yourself at people who are on high-protein, low-carb diets. They usually look "hardened" and far older than they are, with what I call the "old skinny" look, which has lost all its youthfulness. I'll bet you can think of some "old skinny" people!
One study published in the Asia Pacific Journal of Clinical Nutrition focusing on the short- and long-term effects of high-protein and low-carb diets found that "complications such as heart arrhythmias, cardiac contractile function impairment, sudden death, osteoporosis, kidney damage, increased cancer risk, impairment of physical activity and lipid abnormalities can all be linked to long-term restriction of carbohydrates in the diet." Animal protein is also the most complex of all foods: it takes about twice as long as other foods to pass through your digestive system. The more slowly a food is digested in your body, which is a hot 98.6 degrees, the greater the chance that toxins can be created.
There definitely have to be limits to the amount of concentrated protein you consume. The "eat as much animal protein as you can" theory is both aging to your skin and body, and dangerous. Taking in more protein than is needed places a heavy burden on your body, creating acidity (see Chapter 2 for more info on acidity) and wasting Beauty Energy—the very thing you are trying to avoid.
The Lowdown on Fish
Fish and seafood are generally good nutritional choices. But that's not to say that you should start loading up on seafood. Fish is cited as one of the most polluted foods you can eat. Three of the biggest water contaminants that are found in fish are hydrocarbons, PCBs and mercury, although there are others like DDT and fertilizers in our waters.
The sad fact is that our water sources, including the oceans, lakes and rivers, have been polluted with megadoses of toxic chemicals, and fish today act as a sponge for toxins and are often heavily contaminated. Toxins diminish your beauty and age you faster, so although some will argue that fish has some positive health benefits, such as good omega-3 oils (which we'll discuss later; there are cleaner options for getting these fats), the benefits have to be balanced against the dangers.
The American College of Obstetricians and Gynecologists and the American Academy of Pediatrics recommend strict limits on fish consumption for pregnant women because of risks posed to the developing fetus. However, especially if you eat out at restaurants for dinner and can choose from some better options (see below), you may choose to keep fish in your diet as part of your moderate amount of weekly animal protein intake.
Here are some tips for choosing fish if you would like to eat it:
Don't eat fish or seafood more than a maximum of two times a week.
Choose fish that may be lower in heavy metals and toxins: wild Alaskan salmon, mahi-mahi, sole, tilapia, trout, striped sea bass, haddock, halibut and whitefish.
Avoid fish high in toxins: swordfish, tuna, shark, bluefish, Chilean sea bass, tilefish, marlin, shellfish (which is particularly high in the heavy metal cadmium) such as shrimp and blue crab, Atlantic or farmed salmon, bluefish, wild striped bass, mackerel and grouper.
Avoid store-bought canned tuna fish, which is high in mercury. A woman who eats just one can of tuna a week will be 30 percent over the EPA cutoff for safe mercury levels.
Because a lot of the chemicals are stored in the fish's fat, be sure to broil or bake your fish to allow as much fat as possible to drain from it. When eating out, order baked fish as opposed to pan-seared or fried dishes.
Be cautious when eating sushi and sashimi. If the fish weren't toxic, it would be a great choice since it's raw, and the amino acids that make up the fish proteins don't become denatured from cooking. But tuna, salmon and other fish commonly used for sushi and sashimi are often the most toxic fish of all.

Good advice with (what I believe is) unintentional narcissism

Overall, I'm a fan of the book as a guide for eating healthy. I probably have more cons (or peeves) than pros, but if you're looking for an easy-to-understand book about food's affect on your inner and outer appearance, this book is for you!
Pros
-As I mentioned, very easy to understand. She doesn't get too much into science nitty gritty about chemical bonds, etc. At the same time, contrary to another comment, Snyder does provide references for her explanations.
-The recipes look delicious!
-Ultimately she recommends a vegan gluten-free diet, which isn't for everyone. She acknowledges that it may take some time to ween off of meat and dairy, and recommends in a non-condescending way to eat hormone-free high quality meat, and local cage-free eggs. With that said, she does explain the effect of meat and dairy on your insides and outsides.
-She goes into detail about 50 healthy foods, and why they are good for your body, inside and out.
Cons
There are quite a few :-)
-Overall, I feel like the book was written specifically for celebrities and rich people (what I like to call the "Trophy Wife Diet"). In order to maintain this diet strictly, especially with organic-only produce, you're going to easily dump $1K on produce and other food items per month. The amount for the Glowing Green Smoothie (32 oz.) per week alone will run about $50 if not more.
-Unless you are dieting, I wouldn't recommend just a GGS for breakfast. Honestly, it's not very filling. It's delicious, and I make variations of it whenever I can, but it won't get me through a morning at work, or even a long walk. Alternatively, Snyder recommends oatmeal (the non-artifically flavored stuff), which is a filling and affordable staple.
-In order to maintain this diet, you will need LOTS of time to make lunch and dinner. Unless you have a work-at-home job, I can't imagine having the time nor patience to cook for hours every single day. Getting to my next point…
…Portion sizes aren't clear. There are pictures of food that are supposedly (for example) 6-8 servings, but she doesn't make it clear what a "portion" for her is.
-In her sample diet plan, she recommends 32 oz of the GGS OR 2-3 celery sticks OR oatmeal. Stop right there. I'm not a nutritionist, but I wouldn't recommend 2-3 celery sticks to ANYONE as a breakfast. Not even someone who needs to lose 100 lbs. Also on one page she talks about how she enjoys a few nori rolls with sprouts, spinach, and sesame seeds for lunch. Honestly, if I were to tell someone that I ate 2-3 celery sticks for breakfast and followed up with a few nori rolls for lunch, I would be told that I had an eating disorder. Going to my next point…
…If I'm not mistaken, I believe that she's a yoga instructor. She confirms in her book that she used to exercise frequently and ingest protein drinks. I believe that the diet can be more suitable for someone who does yoga, but I like to jog and do pilates. A GGS and a salad is not suitable after several miles of jogging. In fact, a trainer once advised against eating fruit after a work out, because of the sugar content. Personally I've been a vegetarian for 16 years and dairy-free for 2. I need my protein. :-) I still consume eggs (cage-free only) There are also some yummy vegan protein powders out there.
-At one point she discusses the controversy of kale and how it potentially causes calcium build up in the kidneys. Despite the controversy, she hypothesized that it's ok to eat kale in its raw form. Now, I've had kidney stones twice. Trust me, you don't want them. I was advised to avoid kale and spinach. I've done some research online, and yes, everyone contradicts each other. I'd avoid it in large quantities just to be safe. I didn't appreciate Kim's approval of raw kale without scientifically backing up her statement.
-The constant reminders of her "celebrity" success are tacky. At one point she actually writes, "One celebrity loves this dish! (You know who you are!)" Ew, tacky!!! This isn't a high school yearbook! And throughout the book she adds attention to how thick her hair is, how toned her body is, etc. Like, repeatedly. I don't think she means to, but she comes off as really vein. Kind of rub-it-in-your-face "Look at how beautiful/thin/etc I am. Don't you want to look like me? Don't you?!?!" Again, I think that she means well, but that's the impression that I get. (Same with her Facebook page, with endless photos of herself....)
-Going with that idea, on one page she mentions that the first thing she notices if someone's skin. If someone has bad skin, she interprets what's wrong with their diets. Ew, judgmental much?
-I wish she would've gone into detail about how she was able to afford 3 years of global travel after graduating undergrad? What 22-year old can afford that? Was it a grant, wealthy family, or both?
-Like someone else mentioned, she discusses eating healthy almost entirely for superficial reasons. If I read, "…be your most beautiful…" one more time, I'm going to vomit.
-The recipes look delicious and I'm eager to cook some. However some of these dishes require $50 or more of ingredients. The Buckwheat pancakes look delicious, but I can't drop $50 on one meal.
-Her no-carb practically no-sugar diet is a bit intense. Not for everybody, especially those who are very physically active.
OK, quite a list, I know. But despite the many cons, I do recommend the book as a basic guideline for how to eat. The morning smoothies are a good "appetizer". As a non-smoking vegetarian, at 31 I have few thin wrinkles on my face. As a non-dairy-er (sure that's a word...) for 2 years, I've noticed a major difference in my appearance. I lost 7 pounds within the first month of no dairy, and have maintained a slimmer figure. I highly recommend quitting dairy if you can. However if you try it for let's say, one month, your body will lose the enzymes for digesting diary, and your first dairy meal after a month will most likely cause severe nausea and headaches.
Oh yeah, and avoid those Magnesium Oxide pills that she recommends on her site, unless you are super backed up and don't have work the next day. They're basically diarrhea pills. The digestive enzyme pills are ok, but they honestly didn't prevent sautéed broccoli from giving me the farts. I'll finish the bottle but won't buy another.

The ONLY book on nutrition & lifestyle you'll ever need or want

I have to admit, I was skeptical. I was a science major, have been on the up and up with human biology and nutrition for years, have been eating a plant based diet for 19 years, most of these vegan.... and the title of her first books, "Beauty" Detox Solutions, made me think that maybe this was just another pretty girl claiming to know how to transform you into a pretty girl too with the latest fad diet. However, I gave the book a chance and WOW... I mean, it was no placebo, the tweaks I made to my diet by following her guidelines did the trick to make me see an almost IMMEDIATE difference. And once you stick with it, you definitely see an immediate difference if you fall off the wagon!!! Here I am, 35 and 110lbs thinking she had nothing new to say and that I was as healthy as I could get, and I can tell you, if you are considering buying Kimberly Snyder's books, DO IT! I never realized how drained I was until I followed her diet guidelines, I didn't see how my soy latte a day was me being dependent on the highs from caffeine. I gave up coffee completely and bring my own high quality herbal tea to work now, yet I have WAY more energy than before. I'm a working single mother supporting us entirely solo, I'm starting my own business in fair trade, AND I practice yoga and am going through teacher training on the side....and believe it or not, KIMBERLY SNYDER alone is to thank for the fact that I can keep up the pace!!! I have NEVER had as much natural and consistent energy as I do now. I find it easier to stay emotionally positive, so I think her diet guidelines can also help your mood! Also, I'm no Julia Child, in fact, the running joke in my family is my lack of cooking skills, but with Kimberly's book I find it INSPIRING to prepare food, for the first time in my life!!!! And I start every single morning with her Glowing Green Smoothie. Since this transformation I have had people I don't know asking about my hair, my energy and brightness, etc....I lost count how many times I have written down Kimberly Snyder's book for people! My digestion is normal for the first time in my life, my hair is finally loosing the straw-like texture, and my yoga practice has become stronger than ever. I will forever follow her blogs and buy her books....in fact, I bought 3 of her old one to give away, and 3 of this title so that I had a couple lending copies...now I am just waiting for her to write a kids recipe book, or a book about her world travels. This girl is LEGIT too, she's SO much more than just some pretty girl who tells celebrities how to eat, she's strong, she roughed it around the world and is a true yogini! I love her so much. I can't say enough good things about this book. You'll be selling yourself short if you didn't get it.

Nice Book, but Customer Ratings a fake?

I liked the book, since it favours green Smoothies and a nutrition rich of organic minerals, which I have made very nice experience with, going from "Fast Food & Beer" to a balanced Diet of unprocessed Foods, supplemented with Green Smoothies. It truly made me look younger and feel better.
But browsing all those 5 star reviews made me sceptical. I then took a look at the number of reviews each of those 5 star reviewers has written on amazon.com: 16 out of 20 I looked at have been written one review only - on this book. Now, you can draw your own conslusions.
